Disasters - Are You Prepared?

Quick Links

The pictures are the same – people wading in knee high waters; houses filled with mud; drivers stranded on top of their vehicles. One year ago, the scenes were from Louisiana and Mississippi.  This month, disaster hit New Mexico.   Record rainfalls have caused many throughout the state to lose their homes, jobs and businesses to the flooding.  They need help to rebuild their lives.

Roadrunner Food Bank has been working with the communities most affected.  We’ve sent food to the communities of Hatch, Socorro, Laguna and Alamo.  Our trucks were stocked with fresh bread, produce and boxes of food staples to help those affected feed their families and fill their pantries. We will be there to help them with their food needs during the recovery process.

Roadrunner Food Bank is active in the New Mexico VOAD (Voluntary Organizations Active in Disaster)  VOAD is a coalition of government, non-profit, religious and community organizations working together to assist emergency responders and disaster survivors.  In times of disaster, Roadrunner stands ready to respond, serving our community locally and nationally.

Natural and man-made disasters occur all the time. According to the Department of Homeland Security, the number of declared disasters doubled in the 1990’s compared to the prior decade.

If you were forced to evacuate due to flooding or a fire – would you know what to do or where to meet your family?  As a business owner --how would you secure your assets and communicate with your employees?

Disaster Preparedness is essential for everyone – not just families but also businesses, organizations and the community. The Federal Emergency Management Administration (FEMA) recommends that families, businesses and organizations prepare in advance with emergency kits, business and contingency plans. Healthy Recipes:

Many times our cooler is filled with unfamiliar or mass quantities of produce.  As part of our Feeding Families and Healthy Foods Initiatives, Roadrunner is creating a recipe book to assist agencies and clients in the preparation of produce and non perishable foods from the food bank. Each month, our e-newsletter will feature a different recipe. If you would like to help with this project or donate healthy family favorites, please contact rebecca@rrfb.org.

CHILE VERDE (STEW WITH GREEN CHILIES)

3 lbs. chicken, cubed
3 lg. onions, chopped
3 cloves garlic, minced
1 tbsp. oregano, crumbled
1 c. green chilies, chopped
1 to 2 Jalapenos, deseeded & chopped (optional)
1/2 tsp. cumin seed, crushed
1/2 tsp. cilantro seed, crushed (also known as coriander)
3 tbsp. flour
Water
Salt & pepper
Olive or Mazola oil to sauté

Cook or bake chicken, remove meat from bones and cartilage, and cut into cubes. Brown meat in olive oil.  Remove from pan and sprinkle meat with the flour. Brown onions and garlic in frying pan using oil until transparent, but not brown. Add meat, oregano and other seasonings, chilies to onion mixture and add water to cover. Simmer 2 to 3 hours. Add salt and pepper during last 1/2 hour. Cool and degrease stew. Serve with tortillas or fry bread.

Serves 6.

GREAT GRANDMA'S FRY BREAD

2 c. flour
2 rounded tsp. baking powder
1/2 tsp. salt
1 tsp. sugar ½ tsp. honey

1 lg. egg
1 c. milk

Mix together first four ingredients. Add egg and milk; mix well and turn bowl while mixing. Turn dough out on floured board and roll dough out to 1/4" thickness. Cut into 4 to 5 inch circles. Preheat skillet with about 1/4" Mazola or olive oil to very hot, 360 degrees. Put circles in pan, and turn over and over until golden brown, they will puff up. Drain on paper towel. Slit side open, fill with honey or homemade jelly.  Impossible to eat just one!  Alternative method: Bake bread pockets at 350 degrees on a cookie sheet for 20 to 25 minutes, then dust with confectioner's sugar.
